1 lb penne or bowtie pasta
1 lb roma tomatoes cut in half lengthwise, pulp and seeds scooped out, then sliced lengthwise
1/2 lb fresh mozzarella cheese sliced lengthwise
1 pkg fresh basil torn into pieces
3 Tbs red wine vinegar
3 Tbs olive oil
Salt and pepper to taste

Directions:
Directions:
Combine tomatoes, cheese, vinegar and olive oil in a large bowl. Cover with plastic wrap and let sit at room temperature for at least 2 hours. Cook and drain pasta. Add basil to tomato mixture and pour over pasta. Stir to combine- add salt, pepper and more vinegar and/or olive oil to taste.
