Canned or fresh fish
1 tbsp olive oil
1 tbsp flour
1 c. buttermilk
Toast, cornbread or biscuit

Cover the bottom of a 10 inch cast iron skillet with olive oil. Heat to pre-smoke (you can add some minced onions at this point). Add one can of drained mackerel, salmon, or two cans of drained tuna. Stir, mash and spread across pan, turning as needed. Mix a heaping tablespoon of flour to 1 cup of buttermilk. Pour over hot fish and stir constantly until thickened. Lower heat. Ladle mixture onto toast, biscuit or corn bread.
