1 lb. boneless, skinless chicken thighs, chopped into bite-sized pieces
1 t. minced ginger
1-2 garlic cloves
1 medium onion, chopped
2 cups frozen chopped mango, chopped into smaller pieces
Soy sauce/tamari to taste
2 T. olive oil
1 head bok choy, or 3/4 head napa cabbage, or green cabbage, or tat soi, etc., chopped into bite-sized pieces
package soba noodles
toasted sesame oil to taste

Directions:
Directions:
Heat olive oil in pan. Add chicken and onions. Saute over medium heat until chicken is cooked through.
Meanwhile, begin heating water to cook noodles. Continue cooking noodles according to instructions. When they are finished, drain and toss with toasted sesame oil--about 1-2 tablespoons.

Back to the chicken. Add ginger and garlic. Saute a minute. Add mango and soy sauce. Cook a minute or two. Add the Asian greens of choice to the pan. Reduce heat to low. Cover and cook until the greens are cooked through (a few to several minutes depending upon what type of green you use).

Serve the mango-chicken stir-fry on top of sesame noodles.
