2 T. olive oil
1-2 tsp. minced garlic
1 tsp. dried or 1 T. fresh chopped basil
1/2 c. diced onions (optional)
6 c. broth (low-sodium chicken or vegetable)
1 c. dried tortellini
1 c. sliced carrots
1 c. broccoli spears or green beans
1 can chopped tomatoes
1/4 c. white wine (optional)
Shredded parmesan cheese to taste

Directions:
Directions:
Heat oil in the bottom of a soup pot over medium-low heat. Add garlic, optional onion and basil and cook 2-3 minutes (or until onion is soft). Add stock, raise heat to high and bring to boil. Add tortellini, reduce heat and simmer for 5 minutes. Add vegetalbes and return to boil. Reduce heat, add optional wine and simmer until vegetables are tender (about 10 minutes). Top each serving with shredded cheese.
