1 Can Carnation Milk
1 Can Water (empty Carnation can)
3 Eggs (yellows only) save whites for topping
1/2 Stick Of Butter
1 tsp. Vanilla Flavor
3 tbsp. Corn Starch
7 oz. Coconut
1 Pie Crust 9"

Topping:
3 Egg Whites
1/2 tsp. Vanilla
2 tsp. Sugar
Small hand full of coconut

Directions:
Directions:
Spread coconut in a large pan and put in oven at 350º until brown, stir frequently to keep from burning coconut.
Mix Carnation milk, water, sugar, egg yellows, butter, vanilla, corn starch, by hand. Cook on medium heat until pie starts to thicken, stir in coconut. Remove from heat and pour in pie shell.

Topping:
Use a electric mixer and beat egg whites, vanilla, and sugar until thick. Spread topping on pie, sprinkle coconut on top of pie filling, then put pie in the over at 350º until slightly brown.

This has been a family favorite for many years and is still Billy and Paul's favorite pie. Not to mention her Husband and Preacher's favorite desert.
