3 Cups Raw Apples Chopped
1 tsp. Salt
1 1/4 Cup Cooking Oil
1 tsp. Soda
2 Cups Sugar
2 tsp. Baking Powder
3 Eggs
1 tsp. Vanilla
2 1/2 Cups Sifted Flour
1 cup Walnuts or Pecans

Fresh Apple Cake Icing
2 tbsp. Butter
1 Cup Powered Sugar
2 tbsp. Milk
1 tsp. Vanilla Or A Few Drops Of Lemon Juice
Cool Whip Is Good On This Cake

Peel apples and chop, set aside. Pour cooking oil into a large mixing bowl, add sugar, eggs and beat well. Sift flour with salt, soda and baking powder. Gradually add flour to cream mixture. Add vanilla. Gently fold in apples and nuts. I bake mine in a bunt pan or 2 loaves. grease pans generously and flour. Bake at 350º for one hour or until done. Remove from pan and drizzle with the following icing: 1 cup powered sugar 2 tbsp milk, 1 tsp vanilla or a few drops of lemon juice. Cool whip is good on this cake.
