3 C. frozen carrot, broccoli and cauliflower blend, thawed and drained
1/2 C. onion
1 /2 C. sliced mushrooms, drained
1 C. + 2 Tbsp. shredded cheddar cheese
3/4 C. Bisquick baking mix
1 1/2 C. evaporated milk
3 eggs
1/2 tsp. lemon pepper
1/4 C. chopped pimento, drained

Directions:
Preheat oven to 375º. Spray a 10" pie plate with butter flavored spray. Layer vegetables, onion, mushrooms. Sprinkle with cheese. Mix Bisquick, milk and eggs until smooth. Stir in pepper and pimento. Pour over cheese and vegetables. Bake 40-45 minutes until knife inserted in center comes out clean. Let cool for 5 minutes on wire rack.
