Chopped green onions ( personal amount)
3 cups chopped carrots (organic preferred) I usually make enough to freeze.
2 tps grated ginger
6 cloves of chopped garlic
1 !/2 tsp salt
4 cups of water... (I cut out the salt and use vegetarian broth instead)
I can coconut milk

Directions:
Directions:
Saute onion and garlic
Add ginger and carrot... salt and pepper...water or veggie broth
Simmer 1 hour
Allow to cool and blend it all.
Top soup with a dash of cinnamon.....
Yummy
Use any squash as well with same idea....

I sometimes put some 'edame' for color and nutritition !!!
Great in the Fall with home made bread if one can eat it.
I eat spelt bread for the gluten free situation.
It is great!!!
