2 gals large green cucumbers
2 cups salt
8 1/2 qts water
7 cups vinegar
1 Tbls powdered alum
4 tsp food color (red is best)
12 cups sugar
5 sticks cinnamon

Directions:
Directions:
Cut unpeeled cucumbers in thirds (crosswise) - remove seeds. Slice into 1/2 inch rings (making 2 gals total). Add salt and 8 qtrs of water. Let stand for 5 days. Drain.

Combine 1 cup vinegar, alum and food color in large pot - Add cucumber rings and water - cover, simmer 2 hours. Drain.

Bring to boil 6 cups vinegar, 2 cups water, sugar and cinnamon. Pour over drained rings. Let stand overnight. Drain into pan and reheat syrup and pour over rings. Repeat for 3 days.

On third day, pack rings in hot hot sterilized jars. Pour boiling syrup and seal at once.
