2 lbs watermelon rind
2 cups vinegar
2 cups water
4 cups sugar
1 stick cinnamon
1 tsp whole cloves
1 tsp whole allspice
1 lemon (sliced thin)

Directions:
Cut watermelon rind and remove all but slight tinge of red portion. Cut into 2 x 1 inches and 1/2 inch thick. Soak rind overnight in water (1/4 cup salt to 1 qt of water).

The next day, drain, rinse in fresh water 2 - 3 times, drain. Cook rind in fresh water until tender, drain. Combine remaining ingredients and boil together for 5 minutes. Add rind a few pieces at a time and cook until rind is clear.

In the meantime, have pickle jars in hot hot water. Put lids in water to boil.

One jar at a time, pack hot, hot sterilized jars, cover with boiling syrup and seal.
