4-6 split chicken breasts (with bone and skin)
1 onion diced
6-10 cloves garlic
3 Tbsp. dried cilantro
3 Tbsp. salt
Large pot of water

Directions:
Directions:
In the large pot of water (enough water to cover chicken), stir in salt and cilantro. Turn heat on high; while water comes to a boil, dice the onion and add to pot. Wash breast halves and add to water. Pee garlic and add whole cloves to water. (Watch water as it comes to a boil to make sure it doesn't boil over). After coming to a rolling boil, turn down to about medium to medium-low heat. Let chicken gently boil for about 3 hours. Remove chicken with a slotted spoon and let cool. Remove skin and bones. Cut cooked chicken across grain into 1/4 inch slices (this should case chicken to crumble into small bits. Use chicken in "Chicken Salad" recipe or on top of green salads or measure chicken into 2-cup portions and freeze for future use. Broth is also good to have in freezer for soups and etc.
