Mustard Glaze
1/3 cup firmly packed dark brown sugar
1/4 cup Dijon mustard, coarse grained preferred
2 Tablespoons + 1/2 teaspoon apple cider vinegar
1 Tablespoon molasses
1 1/2 tsp. dry mustard

1 Rack (about 3 lbs.) pork spare ribs.
Minced Garlic to taste
Minced fresh or dried Rosemary to taste
Salt & Pepper

Rub the ribs with minced fresh rosemary (or dried) and minced garlic, be generous and don't skip these ingredients. Bake in 350 degree oven for 1 hour turning once. This can be done up to 1 day ahead.
Prepare glaze by combining all ingredients in saucepan. Bring to simmer, stirring well. Cool. Prepare grill, place ribs meaty side up. Brush on glaze, cook and turn every few minutes until glazed and crisp. DO NOT leave unattended, will burn very quickly. Remember the ribs are already cooked, you are just glazing and crisping them on the grill. Cut into individual ribs. Serves 2.
(for 2 racks of ribs, I double the recipe).
