2 T cup extra-virgin olive oil
1-2 ounces Pancetta, finely chopped
1 medium onion. finely diced
2 garlic cloves, peeled and coarsely chopped
1-2 celery stalks, finely chopped
1-2 carrots, finely chopped
1 pound ground chuck beef
pinch of allspice
1 cup milk
1 cup dry white wine
1 28 ounce can crushed tomatoes
1/4 cup flat-leaf Italian parsley, chopped
8 fresh basil leaves, chopped
salt and freshly ground black pepper
1 pound pasta, such a rigatoni
1/4 cup freshly grated Pecorino Romano cheese

In a large skilled cook the diced pancetta, adding the olive oil as needed till the pancetta has released its oil and is beginning to brown. Add the onion and garlic, carrot and celery and saute over medium heat until the onions become translucent, about 8-10 minutes. Add the ground beef, breaking it up with a spoon, along with 1/4 tsp. salt, plus pepper and allspice. Saute, stirring frequently and cook until meat is no longer pink, about 10 minutes. Add milk. When it begins to simmer, reduce heat to low and cook at a gentle simmer, stirring occasionally until milk has mostly boiled away, about 30 minutes. Add white wine and cook as with the milk, until it has mostly boiled away. Add the tomatoes, parsley and basil and simmer over low heat until the sauce thickens - the longer the better 2 1/2-3 hours. Season with salt and pepper. Serve with your favorite pasta and top with Pecorino Romano cheese.

this sauce takes a lot of time but it does not require much skill or effort. Once you've added all the ingredients, you could put it in a crock pot and leave it alone.
