Ingredients:
Ingredients:
2 packages frozen chopped broccoli (preferably Birdseye)
1 can Campbells Cream of Mushroom Soup
1 1/2 c. grated sharp cheddar cheese
3/4 c. Hellmanns Light Mayonnaise
2 eggs, beaten
1 sleeve Ritz or Townhouse crackers
1/2 stick of butter

Directions:
Directions:
Preheat oven to 350 degrees.

Cook broccoli in as little water as possible for about 5 minutes. You want to cook the broccoli just until done - but not overdone so that it turns into mush. If you prefer, you can cook it in the microwave just until done. Drain any liquid from the broccoli. Add all other ingredients. Mix well and pour into 8x8 or 9x9 glass casserole dish. Crush crackers in a bowl. Melt the 1/2 stick butter and pour into the crackers. Stir/mix with a fork to moisten the cracker crumbs. Spread this mixture on top of the casserole. Bake at 350 degrees for about 30 minutes. The crackers should be browned and the casserole no longer "jiggly".
