2 lbs chicken (any part, thighs, breasts, etc)
1 large jar of salsa
1 can Progresso Sante Fe Chicken Soup
1 can black beans
1 can Kuna spicy corn
1 ½ lbs Mexican shredded cheese
Spanish rice mix (a box with rice and seasonings together)
flour tortillas

Cook chicken and Progresso soup in slow cooker for 6-8 hours. Remove chicken, when cool shred and put back in slow cooker. Add can of beans, corn (undrained to compensate for the Spanish rice mix) and Spanish rice mix. Heat until rice is cooked (about ½ to 1 hour).

Line a 13 x 9 inch pan with some salsa. In each tortilla put in small amount of salsa, add filling from slow cooker and small amount of cheese. Put filled tortilla seam side down in pan. Cover with remaining salsa and then cheese. Cover with foil, bake at 350º for 30 minutes. Uncover and bake an additional 15 minutes for cheese to brown a little. Have shredded lettuce, chopped tomatoes, guacamole, sour cream and more salsa for garnishments. Serve and enjoy!
