1 C flour
1 tsp baking soda
1/2 tsp salt
1 stick butter, softened
1 C sugar
2 ripe bananas
1 egg
1 tsp vanilla
1/2 C yogurt or sour cream
1 C peanut butter

Directions:
Directions:
Beat butter 'til smooth, add sugar 'til fluffy. Mix in bananas until almost smooth and add in egg and vanilla, beating for an additional minute. Alternating flour and yogurt or sour cream, add to mixture along with baking soda and salt and beat well. Fill approximately 14 mufffin cups 3/4 full and drop 1 T peanut butter on top, swirling into batter with a butter knife. Bake at 350º for 17-18 minutes until tops are golden brown. Cool and turn out of pan.
