1 c sugar
pickling spice or 1 t mixed herbs

Bring to a boil for 5 minutes. Let cool and pour over herring and fresh onion slices. Sugar may be reduced , depending on tartness required.

This recipe is from the Holland Herring Fisheries Association. Grandpa Don used this recipe to marinate herring during the holidays. It is said to bring good luck if you eat pickled herring on New Year's!
