Ingredients:  
1 1/2 lb red fish
1 T cornstarch
1 egg white
1 T water for each egg used
peanut oil (1" in skillet)

Sauce:
2 mushrooms, slivered
4 green onion, slivered
2 T soy sauce
1/4 c white wine
2 T water
pinch of ginger and cloves

Directions:
Directions:
Dip fish in cornstarch, then in egg white and water. Re-dip in cornstarch. When peanut oil hot drop in fish, fry both sides (about 10 minutes total).

Sauce: Mix ingredients in saucepan. Bring to simmer and heat 5 minutes. Pour over fried fish.
