4 cups basil leaves
3 cloves garlic
1/2 cup pignoli (nuts)
1.2 cup Italian parsley
1 tsp. salt
1/2 to 1 cup oil
1/2 cup pecorino or Parmesan cheese

Directions:
Directions:
Put basil, garlic, pignoli, parsley and salt into food processor or blender with 1/2 cup oil. Process to smooth paste, adding additional oil. Add cheese and process further.
For freezer pesto, process garlic, parley, salt and oil, 1 cup portions. When defrosted put in processor and add nuts and cheese. Can do:
Pesto with walnuts (1/2 cup)
Parsley instead of basil - use 3 cups Italian Parsley.
