1 Large Eggplant - skinned and cubed
1 Chopped Onion
4-5 Pieces of Chopped Celery
Pimento Green Olives
Capers
1/2 Can Kitchen Ready Canned Tomatoes
2 Tbsp of White Vinegar

Directions:
Directions:
Take skin of eggplant. Dice and cube. Not too small about 1/2. Pat with papertowels.

Saute in oil.

Take eggplant out with a slotted spoon.

Saute - chopped onion, celery, olives and capers.

Add kitchen ready tomatoes. Continue to saute together.
Add cubed eggplant.
Add vinegar. Stir and Saute for 15 minutes.

Serve with crackers, chips or over pasta. Enjoy.
