1 cup dried black-eyed peas 1 1/2 cups boiling water
1 tsp salt 1/4 pound ground beef
1/2 medium onion, chopped 1/2 cup commercial barbecue sauce
1 Tbsp prepared mustard 3 Tbsp brown sugar

Directions:
Directions:
Cook peas in boiling water with salt until peas are barely tender, add more water if necessary. Pour off half of liquid. Brown ground beef and onion; add to peas. Stir in barbecue sauce, mustard, and sugar. Bake at 200º for 1 to 1/2 hours.
Yield: 4 to 6 servings.
