2 egg whites, unbeaten
1 1/2 c. sugar
5 Tbsp. cold water
1/4 tsp. cream of tartar
1 tsp. salt

Directions:
Directions:
Place ingredients, except flavoring in top of double boiler. Beat until they are thoroughly blended. Use a whip or Dover beater. Place top over bottom of double boiler filled with rapidly boiling water. Beat icing for 7 minutes. Remove from heat and add flavoring. The icing is then ready to be spread. If you want lemon icing, use only 2 Tbsp. of water. Add 2 Tbsp. of lemon juice and 1/4 tsp. of grated lemon rind.
