8 oz. of washed cut up spinach
2 boneless chicken breast
1 1/2 C. extra virgin olive oil
4 or 5 cloves of garlic (depending on preference)
1 bunch of fresh parsley
6 leaves of fresh basil
2 tomatoes
3/4 C white wine
1 lb. of penne
2 tsp. black pepper
2 tsp crushed red pepper
pinch of salt
Romano pecorino grated cheese

Directions:
Directions:
In medium size saute pan add olive oil. Chop up all the garlic, basil and half of the parsley. Cut tomatoes in quarters. Add garlic, basil, parsley and tomatoes. In a separate pan add a dash of olive oil to coat. Take chicken breast, trim fat and cut in 1 inch thick slices. Add chicken to pan and brown it along with 1 tsp of black pepper and 1 tsp of crushed red pepper. Once chicken is brown add to garlic mixture. Heat the ingredients on low/ medium heat until garlic become aromatic. Add 1/2 C of white wine along with Spinach. Meanwhile boil penne until done. Add pinch of salt to sauce. Cook on low/medium for 25 minutes. Stir and serve on penne. Add the rest of the black pepper ,crushed red pepper to your liking. Top with Romano cheese.
