1 1/2 cup yellow prepared corn bread mix
OR 1 cup yellow corn meal with; 1/2 cup flour ;1 tsp salt;1 1/4 tsp baking powder; 1/2 tsp baking soda
1 2/4 cup buttermilk
1/2 lb ground pork sausage.cooked
3 tbsp bacon drippings
1 med onion..........chopped
1 egg
1/2 lb cheese ...... shredded
1 12oz can whole or cream corn
1-5 jalapeños.......chopped

MELT BACON DRIPPINGS IN AN 8X8 PAN
MIX CORN MEAL MIX (boxed or prepared), BUTTERMILK, EGG, BACON DRIPPINGS AND CANNED CORN
POUR 1/2 INTO PAN THEN LAYER SAUSAGE , CHEESE, ONION AND JALAPEÑOS.
THEN POUR REMAINING MIXTURE ON TOP.
BAKE IN OVEN ON 350º FOR ABOUT 45 MIN UNTIL BROWN ON TOP
LET COOL FOR 10MIN BEFORE CUTTING AND SERVE
