4 c. Zucchini, shredded
1 c. Onion, chopped
¼ c. Butter
2 tbsp. Parsley Flakes
¾ tsp. Salt
½ tsp. Pepper
¼ tsp. dried Basil
¼ tsp. Garlic Powder
¼ tsp. Oregano
2 Eggs, beaten
2 c. Mozzarella Cheese, shredded
2 (9-inch) Pie Shells, unbaked

Directions:
Directions:
Saute zucchini and onion in butter in large skillet for 10 min. or until tender. Stir in parsley, salt, pepper, basil, garlic powder and oregano. Combine eggs and mozzarella cheese in bowl; add to zucchini mixture.
Pour into pie shells. Bake at 375º for 20 minutes or until set. Let stand for 10 minutes before serving.
