3 1/2 c. of flour
1 c. sugar
3 tsp. baking powder
1/2 tsp. salt
1/2 tsp. ground cinnamon
1/4 tsp. ground nutmeg
2 TBS. Shortening
2 eggs
3/4 c. milk

Kettle at 375º

Heat oil (2 to 3 inches deep) in deep flat fryer or heave kettle. Beat 1 1/2 c. of the flour and the remaining ingredients in a large mixing bowl on low speed, scraping the edges of the bowl; occasionally for 2 minutes. Stir in the remaining flour. Turn the dough onto a well floured cloth covered board; roll around lightly to coat with flour. Cut with a floured doughnut cutter. Slide doughnuts into hot oil with a wide spatula. Turn doughnuts as they rise to the surface. Fry until golden brown, 1 to 1 1/2 mins. on each side. remove from the oil do not prick doughnuts. Drain on paper towels. Serve plain, sugared or frosted.
