1 tsp. curry powder
2 tbsp. mayo
1/2 c. plain yogurt
1 lb. chicken breast
1 c. red seedless grapes
1/4 c. sliced almonds
1/4 c. chopped cilantro

Directions:
Directions:
Combine curry, mayo and plain yogurt in a bowl.
Poach the chicken by boiling 2 cups water with a chicken bouillion cube, adding chicken, cover tightly, turn off burner and let sit for at least 20 minutes.
Meanwhile, cut the grapes in half, toast the almonds on medium heat for a few mins, chop the cilantro and then cube the chicken. Add to the creamy mixture and coat well. Serve with lettuce on a croissant roll. Best serve chilled, but can also be served warm, too.
