6-8 boneless/and or skinless chicken thighs
1 large chopped green pepper
1 large chopped vidalia or spanish onion
3-4 tbls olive oil
2 large garlic cloves
2 tbls fresh chopped parsley
2 tbls fresh chopped basil
2 cans hunts tomato sauce
1 cup of chianti red wine (or red wine of your choice)
1 cup of portabella or baby bella mushrooms
oregano
salt
pepper

Directions:
Directions:
Large fryer - add 1 tbls olive oil
Brown chicken and remove
Add remaining olive oil and all the garlic
Add onion, pepper and mushroom and saute firm
Add browned chicken thighs
Add pinch of fresh oregano & basil
Add two cans tomato sauce & simmer for 20 mins
Add 1/2 cup to 2/3 cup of wine
Top with fresh basil and parsley
