Let your rack of ribs sit out for 30-50 minutes and warm up. Massage a layer of mustard on both sides. Let sit while you mix the following rub:
1/4 c. brown sugar
1/4 c. dark brown sugar
2 tsp. sea salt
about 1 tsp of each-
chili powder
paprika
cumin
pepper
about 1/2 tsp of each-
ginger
garlic powder
onion powder
mustard powder

Blend all together thoroughly. Preheat oven to 350 degrees. Place ribs on foil. Add rub liberally all over ribs and let sit for a few more minutes. Put in oven for 10 minutes then reduce heat to 225 degrees. Keep there for about 2 hours.
Remove from the oven and heat the grill. Baste the ribs with following sauce:
1/2 c ketchup
1/4 c mustard
1/3 c brown sugar
4 tbsp apple cider vinegar
splash of lemon juice
splash of water
splash of worchestershire
1/2 tsp onion powder
1/2 tsp paprika
1/2 tsp garlic powder
2 tbsp dark (or light) corn syrup
5-10 drops of hot sauce
You dont have to measure out each seasoning. Just give several shakes of it into the bowl.

Mix thoroughly and baste on ribs as they cook.
Turn the ribs and baste with sauce on the grill. When sauce begins to caramelize on the ribs, about 8-10 mins on each side on medium-high heat.

Choose a good large slab of baby back pork ribs. It's wise to turn over the ribs and score through the white membrane and remove it. Rinse the ribs with water to remove any bacteria or debris left from butcher. If you can't remove the membrane, just score through it with your knife every few rows. I've cooked them both ways and prefer to remove it so it doesn't curl the ribs when they're cooking.
The sauce isn't too easy to screw up. It mostly depends on your personal likes, if you like it sweet, go heavy on the sugar. If you like it spicy, add some good hot sauce to the mix. The spices are good for flavor!
