3 lbs. fresh amberjack fillets
olive oil
garlic powder
black pepper
seasoned salt
cumin
1 cup wood chips (apple or mesquite)

Directions:
Directions:
Soak chips in water for 30 minutes. Lighty brush fillets with oil. Sprinkle both sides of fillets with cumin, garlic powder, seasoned salt and black pepper. Place fillets on grill over indirect low heat. Place drained chips on coals and close lid on grill. Smoke 2-3 hours depending on thickness of fillets.

Any fish will work. For a local variation, scale and split mullet, leaving whole.
