6 T Butter
2 medium bell peppers
3 medium onions
16 oz white mushrooms sliced
1 bunch green onions chopped (reserve 1/4 cup)
3 cloves garlic
8 oz tomato sauce
6-8 cups water
2 T. brown sugar
Italian seasoning mix (thyme, rosemary, basil)
Salt
Red pepper (to taste)
1 T. Parsley flakes
2 lb white 20-24 ct shrimp raw

Directions:

Chop bell pepper and onion, slice mushrooms and crush garlic. Put butter and vegetable in large stew pot (6 quarts). Cook on medium heat, stirring often until vegetables are cooked down and almost no moisture is remaining.

Add tomato sauce and water, Italian seasoning, salt and red pepper to taste. Just before boil, sprinkle in brown sugar. Bring to rolling boil, add shrimp. As soon as mixture returns to boiling, lower heat, cover and simmer 20-30 min.

Serve with white rice and French bread.

This will come out similar to a broth vegetable soup, watery in nature. Adjust the seasoning to your taste, soup should be spicy but not so much that it overpowers the herbs.
