1 medium yellow onion, diced
whole, peeled canned tomatoes (4 large cans make enough for 10-12 people)
olive oil
salt/pepper

Directions:
Directions:
Saute the onion in olive oil until its translucent. Add the canned tomatoes and salt/pepper to taste. Simmer for 2 hours minimum, mostly covered so you don't loose too much volume.

This seems simple, but there are several tricks:
Be liberal with the olive oil... and just a little less liberal if you are adding meat to the sauce.
BLEND the whole tomatoes - either with a blender, handheld chopper, or food mill. But, if you put the tomatoes through a food mill, you will need more tomatoes since a lot of the volume (pulp) will be removed.
The long cooking time is essential to bring out the flavor of the tomatoes.
If you're aren't adding meat to the sauce, you can add other spices or flavors if this is too basic.
