2 lbs. yellow summer squash and zucchini (or 3 medium sized)
¼ c. onion
1 c. small chopped or grated carrot
1 can cream of chicken soup
1 c. sour cream
1 8 oz. cornbread stuffing mix
½ c. butter
1 lb. hamburger cooked (or you can add chicken instead)
1 c. cheese

Directions:
Directions:
Saute squash/zucchini, onions and carrots in 1 tbsp. butter until 5-10 minutes. Combine soup and sour cream. Fold in sautéed vegetables and hamburger or chicken. Combined stuffing and butter. Spread ½ in bottom of baking dish. Put veggie mixture on top, sprinkle cheese on top, and then add rest of the stuffing on top and bake at 350 for 25 minutes. (12x7x2 pan or casserole dish)
