1 lb. ground beef
5 tbsp. olive oil
2 medium onions, chopped
3 cloves garlic, chopped
1 small bell pepper, chopped
1 small can tomato sauce
1/2 cup celery, chopped
1/2 cup water
3 tbsp. chili powder
Salt (to taste)
Pepper (to taste)
Corn meal mush (need 1 cup of cornmeal and 2 cups of water)
1 cup Cheddar cheese, grated

Brown meat in oil. When browned, add onions, garlic and bell pepper and cook until onions are translucent. Add tomato sauce, celery, water, chili powder, salt and pepper and simmer for 45 minutes.

Meanwhile, make the cornmeal mush. Put cornmeal and water in a small pot with a little salt, bring to a simmer, whisking for five minutes.

Line a casserole dish with the corn meal mush to hold the mixture -- treat it like a pie crust. Scoop the meat mixture into the pie crust, top with grated cheese and bake at 350º for about 30 minutes.

This with a green salad is great dinner fare. Also excellent for an informal supper party. Teenagers love it ... old-agers too!
