3/4 cup sugar
3 Tbsp cornstarch
1/2 tsp cinnamon
1/4 tsp nutmeg
2 cups cranberry juice
2 cups raisins
1/2 tsp almond extract
Pastry for a double crust 9" pie

Directions:
Directions:
Heat oven to 450ºF. In a large saucepan, combine sugar, cornstarch, and spices; mix well. Stir in the juice. Add raisins; cook over low heat, stirring constantly, about 5 minutes until thickened. Stir in almond extract; cool slightly
Line a 9" pie plate with half on the pastry. Pour raisin mixture into pie shell. Cover with remaining pie pastry. Seal and flute the edges. (Or make a lattice top, tucking in the ends.) Bake on the lowest oven rack for 10 minutes. Reduce oven temperature to 350ºF, and bake another 20 minutes or until golden brown. Serve warm or cold. Makes 8 servings
