3 Tbsp. oil
6 medium zucchini
1 tsp. salt
4 large eggs
1 c. buttermilk
1 Tbsp. parsley
1/2 tsp. pepper
1 lb. ground beef
1 medium onion, chopped
1 tsp. seasoned salt
1/2 c. flour

Directions:
Directions:
1. Slice zucchini 1/8 inch thick. Sprinkle with 1 teaspoon salt and let drain for 1 hour. Then blot zucchini on paper towel and let dry. Saute onion in 1 tablespoon oil; add ground beef and brown. Add seasoned salt and set aside.

2. Dip zucchini in flour and fry in 3 tablespoons oil until light brown. Place zucchini between 2 paper towels to absorb oil. Layer the dish with zucchini, then a layer of beef on top, alternating layers and end with a layer of zucchini. Beat eggs and buttermilk and pour over zucchini. Bake at 350ºF for 35-40 minutes or until lightly browned.
