2 eggplants
1 lb. ground pork
1 large yellow onion
4-6 medium tomatoes
Oil
5-6 eggs
1 1/2 c. milk
Salt and pepper to taste

Directions:
Directions:
1. Peel eggplants and cut into 1/2 inch slices. Salt slices and set aside for 1 hour. Chop onion and mix with ground pork; saute meat and onion in oil for 20 minutes. Mix pepper in 3/4 of the cooked meat.

2. Take eggplant slices; dip in flour and beaten eggs (2) and fry very quickly in oil. Slice tomatoes in 1/4 inch slices. Layer eggplant, meat and tomatoes until tomatoes are on top in 9x13 inch Pyrex.

3. Beat 3 eggs with milk and pour over dish. Bake at 325ºF for 35 minutes.
