2 lb. squid, cleaned, tentacles removed and chopped finely
2 onions, chopped finely
1/2 c. finely chopped celery
1/2 c. red wine vinegar
Lemon slices
1/2 c. olive oil
1/4 c. chopped parsley
1 can tomato paste
1/4 c. rice or dry bread
Salt and pepper to taste

Directions:
Directions:
1. Brown onion in olive oil; add parsley and celery. Cook until brown. Add tomato paste, vinegar, salt, pepper, and tentacles. Simmer until fish is almost tender. Add rice or bread crumbs.

2. Stuff fish and seal with a toothpick. Grease a baking dish. Place stuffed fish into pan in a single layer. Add 1/2 cup water; bake at 300ºF for 45 minutes or until fish test done. Sprinkle with parsley and lemon slices. May be served hot or cold.
