1 1/2 lb. chicken breasts
1/3 c. peanut oil
2 c. coarsely chopped celery
2 c. coarsely chopped onions
1 c. diced canned bamboo shoots
1 c. sliced canned water chestnuts
1/4 c. water
1/4 lb. sugar peas
Soy sauce, salt and pepper to taste
1 tsp. cornstarch
1/8 lb. toasted almonds

Directions:

1. Cut chicken into 3/4 inch cubes. Brown quickly in oil in large skillet or wok. Add celery, onions, bamboo shoots, water chestnuts, and sugar peas. Season with salt, pepper and soy sauce.

2. Mix cornstarch into 2 tablespoons cold water. Add cornstarch mixture and 1/4 c. water to skillet, and cook, stirring until slightly thickened and glazed. Add almonds and serve over white rice.
