1/3 c. sugar
1 tsp. pumpkin pie spice
1 tsp. cinnamon
3 c.+ 2 T. flour
1 tsp. cream of tartar
1/2 tsp. salt
1/2 tsp. baking soda
1 c. butter, softened
1 1/2 c. sugar
1/2 c. pumpkin puree
2 tsp. vanilla
1 egg

Directions:
Directions:
Combine 1/3 cup sugar, pumpkin pie spice and cinnamon in a bowl and set aside. Sift dry ingredients together in a large bowl and set aside. Cream butter and 1 1/2 cup sugar. Add pumpkin puree, vanilla and egg. Stir in dry ingredients with butter mixture until combined. Cover and chill dough for 1 hour. Preheat oven to 350°F. Roll dough into 1 1/2 in. balls and roll in sugar/spice mixture to coat. Place 2 in. apart on an ungreased cookie sheet. Bake 12-14 minutes or until golden. Let cookies sit 5 minutes before removing to a cooling rack.
