1 c. oil
1 c. apple cider vinegar
1 c. sugar
1 can Black Beans
1 can Black-eyed Peas
1 can Pinto Beans
1 can white corn
1 Red Bell Pepper
1 Yellow Bell Pepper
1 Green Bell Pepper
1 med onion

Directions:
Directions:
Mix together oil, vinegar, and sugar. Bring to a boil until sugar is dissolved. Drain and rinse beans and corn. Chop peppers and onions fine and add to beans. Mix together with beans and corn. Pour oil/vinegar mixture over all. Stir. Refrigerate 24 hours. Drain off liquid. Serve with "scoops" tortilla chips.
