Ingredients: 2 1/2 lb (1.1kg) pork ribs 2 tbsp oil 12 oz (350g) onions, chopped 2 cloves of garlic, crushed 4 tbsp vinegar 2 1/2 oz (62g) can of tomato puree (paste) 1/4 tsp chilli powder 6 tbsp clear honey 2 beef bouillon cubes, crumbled 1/2 pt (300ml) water salt and black pepper

Directions:Preheat the oven to 375°F (190°C).
1. Heat the oil in a large saucepan, add the onions and fry gently for about 15 minutes or until pale golden brown and soft. Add all the remaining ingredients except the ribs and bring to the boil, stirring constantly. Simmer uncovered for 10 minutes.
2. Arrange the ribs in a single layer in a shallow heatproof dish, season with salt and freshly ground pepper and pour over half the sauce. Cook in the oven for 45 minutes. Remove from the oven and drain off the surplus fat or oil or blot with kitchen paper. Coat with the remaining sauce and roast for a further 15-30 minutes or until golden brown and tender.
3. Serve with a garden salad and warm bread rolls. |
