Crust
1 c flour
1/4 c sugar
1 t lemon peel
1/2 c butter or oleo (I use butter.)

1 slightly beaten egg yolk
1/4 t vanilla

Filling
5 - 8 oz pkgs cream cheese
1/4 t vanilla
3/4 t lemon peel
1 3/4 c sugar
3 T flour
1/4 t salt
4 - 5 eggs = to 1 c.
2 egg yolks
1/4 c whipping cream

Directions:
Directions:
For the crust, cut butter, flour, sugar, and lemon peel till crumbly. Blend in egg yolk and vanilla. Use 1/3 of dough on bottom without sides. Bake at 400º for 8 min. or till golden brown. Cool. When cool, attach sides; butter sides and pat in crust about 1 1/3 " up sides. (I don't butter sides - enough butter in crust.)
Put bowl of water in oven while baking cheesecake to prevent cracking. Also, put cookie sheet under cheesecake while baking to catch cooked out butter. Preheat bowl of water and cookie sheet.

For the filling, let cheese stand until room temperature, about 2 hours, and beat until creamy. Add vanilla and lemon peel. Mix in sugar, flour, and salt to cheese mixture. Add eggs and yolks one at a time. Gently stir in cream. Turn into pan. Bake at 450º for 12 min.; then bake at 300º for 55 min. Remove and let cool 1/2 hour and loosen sides with spatula. At the end of 1 hour, remove sides. Let cool another 2 hours. Refrigerate.
