2 eggs
2 c. sugar
2 c. flour
2 tsp. baking soda
1/2 tsp. salt
2 tsp. vanilla extract
1 (20 oz.) can crushed pineapple in pineapple juice
Frosting:
6 oz. cream cheese
1/4 cup. margarine
1 tsp. vanilla extract
2 c. powdered sugar
Chopped pecans, optional

Directions:
Beat eggs and sugar together. Mix flour, baking soda, salt and vanilla extract together with pineapple juice from can, then add crushed pineapple and egg mixture. Grease and flour a large rimmed cookie sheet or a 9x13 inch pan. Pour cake mixture into pan and bake in a 375°F oven for 20 minutes using a cookie sheet or 30-35 minutes using a 9x13 inch pan. Beat frosting ingredients together and spread on cooled cake. Place chopped pecans on top of icing, if desired.
