2 boxes of orange flavored regular (not instant) tapioca pudding - you can use vanilla if you must - just add some orange juice.
1 small can mandarin oranges
1 15 ounce can diced pineapple
1 15 ounce can fruit cocktail
1 cup whipping cream - unwhipped
1 small can of frozen orange juice concentrate - thawed - as needed

Directions:

Drain all three cans of fruit into a large measuring cup. Add orange juice to the reserved fruit juice to make 2 full cups of juice. Boil tapioca with juice according to the box directions. Remove from heat and cool slightly. Add cream and fold in fruit. Refrigerate until served.
