Ingredients: 1 clay pot 3 lb. spareribs 1 c. cider vinegar 1/2 c. pineapple juice 1 c. sugar 2 clove garlic, finely chopped 4 tbsp. sherry 4 tbsp. soy sauce 4 tsp. cornstarch, dissolved 4 tbsp. cold water

Directions:Pour the vinegar & pineapple juice into a small saucepan. Add the sugar, garlic, sherry & soy sauce. Bring to a simmering point & stir in the cornstarch dissolved in cold water. Continue cooking for two minutes until thickened. Cool the sauce. (If you do not like a generous amount of marinated sauce over the spareribs, cut the above amounts in half.) Soak the clay pot and lid for 10 minutes. Line the clay pot with parchment paper for easy cleaning (optional). Place the spareribs in the pot & marinate the ribs in the sauce for 2 hours or longer if possible. Turn the ribs once or twice in the marinade. Cover the pot & place it in a cold oven. Adjust the heat to 450° and cook for 1 1/2 hours. |
