5 lbs of Chicken Wings
1 C Wheat Beer per pound of Wings (Haven’t been able to get Keystone/Lone Star Beer to work)
5 t coarse salt
2 ½ t ground black pepper
2 ½ t paprika
2 ½ t chili powder
5 ½ T Olive Oil
1 T Unsalted Butter
¼ C Sriracha (Hot Sauce used in Pho)
½ C Crystal brand hot sauce
5 T chopped fresh cilantro

1. Rinse chicken wings. Trim off excess skin and remove the wing tips. Cut wing into two pieces. Put wings into zip lock bags and split beer between bags. Marinate overnight.
2. Add salt, pepper, paprika, chili powder, in a small bowl and mix.
3. Drain the chicken wings in a colander to remove the high quality beer.
4. Dust the chicken wings with the high quality rub that you mixed in step 2 and put back into the zip lock bags. Drizzle 2 T Olive Oil total over your wings in the bags.
5. BBQ using indirect grilling method at about 350 degrees for about 40 – 45 min. Ensure that the wings are turned and rotated about every 10 min
6. Make the hot sauce! 3 T Olive Oil, Hot Sauce (Sriracha and Crystal), Butter to a pan and bring to a simmer. Turn off the stove once at a simmer
7. Once the wings are finished, coat them with the hot sauce created in step 6, put in a holding pan, and garnish with the chopped cilantro.
8. If you want regular wings, don’t put them in the hot sauce.
9. Enjoy
