6 to 8 cups popcorn or 2 bags microwave popcorn
3 cups rice chex
3 cups cheerios oat cereal
2 cups pecans (or 1 cup pecans and 1 cup whole almonds)
2 sticks butter
1 box light brown sugar
½ cup light Karo syrup
1 tsp. baking soda
2 tsp. vanilla

Combine popcorn, Chex, cheerios, and nuts in a large roasting pan sprayed with non stick spray. (a big foil turkey pan works great.) Set aside. Melt butter, sugar, and corn syrup in a saucepan, stirring well until melted. Bring to a boil over low heat; stirring until it begins to boil. Once it boils, stop stirring and cook for 5 minutes. Remove from heat and immediately stir in baking soda and vanilla. Stir until mixture turns light n color and foamy. Pour over popcorn and stir until mixture is well coated. Bake at 250 degrees for 1 hour, stirring every 15 minutes. When stirring make sure to stir all the syrup mixture off of the bottom to prevent burning. Cool. Store in airtight container. Can be made weeks ahead and stored in air-tight bags.
