1 egg, slightly beaten (or 1/4 cup of egg substitute)
1/2 cup sugar
1/2 cup flour
2 tsp. baking powder
1 tsp. vanilla
1 cup chopped walnuts
1 1/2 cups peeled and sliced Granny Smith apples
1/2 tsp. cinnamon and 1/4 tsp. nutmeg (or 3/4 tsp. apple pie spice)

Directions:

Preheat oven to 350º. Coat 9 inch glass pie plate with cooking spray. Combine egg and sugar before adding the next 5 ingredients. Spoon into pie plate; sprinkle with spices. Bake for 30 minutes. Serve warm with reduced fat vanilla ice cream. Yield 6 servings.
