1/3 c Soft butter
1/3 c Light corn syrup
1/2 tsp. Salt
1 tsp Mint Flavoring
3 1/2 c ( 1 lb ) sifted -confectioner's sugar

Directions:
Directions:
Mix the butter, mint and corn syrup together until smooth.

Add confectioner's sugar and salt to the butter mix slowly until you can not mix or cut anymore in.

Turn dough out onto a work surface and knead until it's smooth adding the rest of the sugar as you knead, about 3 or 4 minutes.

Quarter the dough and tint each quarter with a different food coloring. Use the food coloring sparingly, pastel colors are prettier. You can also leave one quarter white if preferred.

Roll dough into half inch balls place them on wax paper and flatten them with a fork dipped in confectioner's sugar. You should keep remaining dough covered with plastic wrap to prevent drying.

The mints need to set for two to three hours at room temperature, uncovered.

Put them in a container with a cover in a cool room for a few days to allow the flavor to improve and make them easier to handle. They can then be wrapped or eaten.
